Core Temp doesn't display all threads

Core Temp displays core temps, not threads. Your CPU only has 4 cores and Core Temp list the temps for all of them. The AMD FX-8150 has 8 cores. That is why it shows 8 temps. vs. 4 temps. on your CPU.

Your CPU has hyperthreading which uses a virtual additional core, not a real core, to simulate an 8 core processor with 8 threads. There is simply only 4 cores in your CPU to report temps on.

Jorge is right.
Core i7 have 4 physical cores and 8 threads. There is no point displaying information of virtual cores as they will be the same as the physical one.
AMD FX have 8 physical cores (4 modules), therefore Core Temp shows all 8 cores.

Ok, I see... But shouldn't it show the frequencies for each of the 4 cores?

It shows the highest frequency among the cores, since AMD chips only have one thermal sensor, I decided to dedicate the freed up space to display frequencies.
If you want to see each core/thread frequency and VID, press F3 when Core Temp is in focus.

The core 4 clock speed, with 3 cores active, should be 1600MHz, as you can see in TMonitor:

I must say that I tried several programs (AIDA64, Argos Monitor, CPU-Z, HWiNFO) and all give wrong core 4 clock speed.

EDIT: I loaded just 3 cores setting affinity.

We have used a different algorithm for the clock speed since Sandy Bridge.
Core Temp reads the multiplier from the register, which can be just a speed step 'setting', and in the majority of cases it's accurate.
TMonitor reports the actual duty cycle of the CPU, which is a little different. It's possible to make Core Temp report this value, but it can sometimes cause confusion for other users and the current implementation also much simpler and more efficient.

It's funny... I have set up the 4-core multiplier to 40 and the core 4 speed went down to 4000 MHz. If I put 39 then it would be 3900 MHz. Is there something I can do to have accurate cpu clock speeds?

That looks like the maximum turbo boost frequencies, not multiplier limits for cores.
Meaning the max multiplier when 1, 2, 3 or 4 cores are under heavy load.

The multiplier limits are mostly due to TDP considerations. So say if you select x39 for all of the cores, even under full load all of the cores should run at x39 without stability issues.
Therefore for best performance you should test for Prime95 and/or linx stability at the highest multiplier you can reach with all cores. In my CPU's case, when all cores are running at 4500MHz (with a little vcore boost) everything is stable.
In short, choose the same multiplier for all of them and test for stability.

The only means to lock the CPU core frequencies and have accurate readouts is to disable all of the CPU power saving states in the BIOS as the CPU core frequencies change all the time based on load and temperature. You can make these changes in the BIOS but it will increase the CPU power consumption and operating temp. Your mobo OM should explain which BIOS options need to be disabled to prevent the CPU power saving options from changing the CPU core frequencies.

You could do that, but then you'll already know your frequency anyway.
On my system I have all of the power saving features turned on, meaning that my CPU goes back to 1600MHz when idle and low voltage, and under load it goes up to 4500MHz with a vcore a little over stock.
This way I don't waste power, the machine doesn't produce extra heat and noise and I still get the performance when I need it.
