On a side note? Should I run this when overclocked or only at defaults?

The reason the program only shows one CPU is because these values are located in the CPU memory controller, and not the cores themselves.
And for this reason the programs searches physical CPUs, and only shows one CPU even if its a dual core.
On a dualie setup, be it single core or dual core, the program will only show 2 CPUs.

Regarding running it OCed or stock, it doesn't matter, the voltage it reads is the stock voltage (not the one you chose in BIOS), so its a static value. So is the TCaseMax value which is static as well, so it doesn't really matter when your run it. The important values will always be the same.
